you CAN do almost everything you listed. the Logitech products (sry CH website was down) are the Extreme 3D Pro joystick as I have had mine for over 3 years now. I highly suggest getting the G13 gameboard from Logitech as well as it helps with common functions like gears and breaks. I suggest the Saitek rudder pedals, (the combat or normal, normal has toe breaks) and Saitek for the quadrant as well. As for the computer side of things, If you have a powerful enough graphics card and processor it is fully possible to have 2 screens but I do not know about having scenery on one and the panel on the other. If you want to hook up more mac minis go for it (im a mac guy, any windows guy would recommend some windows computer) but I do not know how you would do that. I do admit that a 22" screen is kind of small for a panel, you should try a 25" or 27" (the new thunderbolt powered one is supposed to run cooler or something)
