How to use the angle of attack indicator?

The fewer bars there are, the better it is. As AoA increases, more bars will show. Staying in the green is best.

Does the aoa work in vr? I see it on the dash, but not on the reflector when I open it.

It doesn't work in 11.50 yet.  It's being worked on.
