There is a simple plugin called Autopause available on xplane.org that has been around for a long time. Works well.

FYI, I ended up reinstalling the 737 and then reinstalling the hotfix. All is good now.

After installing the hotfix, the cockpit view now contains both pilots (default view is looking at the back of the pilots head) There are now no custom menus, and no ability to manipulate any switches. I've tried rebooting and have disabled all other plugins. No luck.
