Auto Pilot Alt Issues & Trim sensitivity issues

Hi, I am new to X-Plane 11 and finding it difficult to get Autopilot Altitude to work correctly,  I am using g1000 in a Cessna 172 and when I turn on Altitude Autopilot  and set it to say 2,000Ft it just goes goes past, I know Auto pilot is on but for some reason I can't get it to work correctly.

Also is there a way to adjust trim sensitivity, I currently have ot set up on my Saitek X52 pro but I only have to lightly touch the adjuster for trim and the plane dive's or climbs rapidly, I would like the adjustment to be more gradual.
