During a VOR Approach, shouldn't the magenta diamond appear on the PFD for the horizontal guidance once the station is on range? Today I have tried but it doesn't, I had to use the VOR rose on the HSI. Is that correct? Using last 1.0.3. Thanks!

No.

Look at tutorial #4 for information on how it should look like. If you don´t want to fly it in LNAV, use the full rose or expanded rose mode with the correct radial dialed in. The "diamond" only shows for ILS approaches.
