Unable to keep Vnav during weather change

Maybe you could help me.

 

I do not know why but during my flight, established FL230 when weather data changes (X-Plane Weather used). The aircraft rises suddenly.

 

And when I try to recover FL with this very unstable aircraft, the engine shuts down. Perhaps because the speed increases abnormally during the maneuver.

 

It seems to me that when weather conditions change, in this case, it's hard to get away from the keyboard because the plane becomes totally uncontrollable

This might happen because of air pressure changes and the AP is trying to compensate the altitude?

off course but the impact on the flight is not like other aircrafts : 2000 feet increase or decrease, overpass speed limit ,...

and for sure not like real life

how can you manage that even have risk to shut down engine, damage aircraft, and sure inconvenience your passengers ?
