Stability augmentation should be off, ALWAYS (unless you have really, really bad and noisy joystick)

As far as sensitivity goes, Toto recommends 0, there is custom code that simulates air resistance on control surfaces, you might still want to add a little bit if your joystick has little travel.

i have a joystick with little deflection and even with senstivity at 100, it's sensitive as hell lol

YES agree. rudder to 0 is good for only this plane
